How to Make Brandy Chocolate Sauce

Brandy is a caramel colored spirit distilled from wine or fermented fruit juice, typically enjoyed as an after-dinner drink. The 80 proof liquor is also an excellent cooking ingredient and can be added to a favorite chocolate sauce recipe to create an elegant dessert topping.

Ingredients

  • 3/4 cup half & half
  • 2 tablespoons sugar
  • 2 tablespoons butter
  • 5 ounces chocolate chips
  • 2 teaspoons Brandy

Method

Heat a pan with half & half, butter, and sugar on the stovetop set to medium-high heat. Stir the mixture with a silicone spatula or wooden spoon. Stir continually, scraping the bottom and the sides, until all the sugar has melted. Bring the mixture to a boil then lower the heat and allow it to cook at a low boil for an additional two to three minutes.

Add the chocolate chips and stir until the chocolate is melted.

Remove the chocolate from the heat and continue to stir. If the mixture is not completely smooth, set it back on the stovetop over low heat. Remove when the chocolate is smooth.

Serve

Stir in the brandy. Note that because the sauce was cooked prior to adding the brandy, the alcohol will not cook off. Drizzle the brandy chocolate sauce over cakes, ice cream, or pastries.
